The Akshaya Patra Foundation was started in Gujarat with its first kitchen in Gandhinagar on June 14, 2007. The kitchen was inaugurated by the then Hon’ble Chief Minister Sri Narendra Modi. The kitchen was relocated from Gandhinagar to Ahmedabad and was inaugurated by Smt. Anandiben Patel, Hon’ble Chief Minister of Gujarat on Aug 3, 2014.  This kitchen feeds 121,508 children across 666 schools in the districts of both regions. This centralised kitchen is IS0 22000:2005 certified, and follows a technology-intensive, highly efficient model, suited for large-scale cooking.

The kitchen spread over an area of two acres is one of the largest kitchens in India, and has the capacity to cook up to 200,000 meals in five hours. The kitchen also comes equipped with a full-scale bakery which will be used to produce wheat based products for the school children. The kitchen has been constructed with three levels, employing the gravity flow system for the operations process.
This kitchen utilises Steam Generating Boilers with a capacity of 2000 kgs, 7 Stage rice cleaning machine, roti making machine with a capacity to produce 60,000 rotis per hour, rice and dal silos, ETP and RO plants. The kitchen also has 44 custom-designed meal distribution vehicles, to carry to mid-day meals to the beneficiary schools. Overall the kitchen has 275 workers employed, ensuring that the entire operations process is executed smoothly.

The kitchen has been set up through the generosity of certain individuals and entities. Land for the kitchen was donated by Chimanlal Agrawal & family, and Nandlal Agrawal & family. The Hans Foundation supported the capital expenditure, equipment and vehicles; while the Gujarat State Petroleum Corporation (GSPC) co-sponsored the kitchen by donating kitchen equipment. The entire kitchen was built at a total cost of Rs. 15 cores.
